Orange Chocolate Chip Cookies



You can never have too many types of cookies, right? Right! Especially around the holidays. These came about due to my deep love of orange and chocolate as a flavor combination, and they're savagely simple to make.





 Ingredients:

1/2 cup unsalted butter, softened
1 cup sugar
1 egg
Finely grated rind of 1 orange
1/3 cup good quality orange juice
1 and 3/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup mini chocolate chips

Preparation:

1. Cream together butter and sugar. Add grated rind, egg, and orange juice. This will make your dough curdle worryingly due to the combination of acid and fat, but it should look as pictured below.



2. Sift together flour, baking soda, and salt in a separate bowl. Gradually add this to the step one ingredients, mixing well. If the dough seems very wet still, sift a bit more flour in (no more than 1/8 cup).




3. Stir in chocolate chips. Cover dough and chill for one hour. (I was out of mini chocolate chips and used larger ones, which works fine. I added extra, though, to ensure a better distribution through my dough).
4. Heat oven to 425°.
5. Drop dough by rounded teaspoonfuls on an ungreased baking sheet. Dough rounds should be about two inches apart.



6. Bake for 8-10 minutes, or until almost no imprint remains when the cookies are gently touched with a finger.
7. Remove cookies immediately from baking sheet and cool on a wire rack. Makes roughly 4 dozen cookies.
